Yes this is possible. The raid config utility is fairly straightforward but check the manual for more detail. If no disks are in use, then just try and check it has done what you want before putting data on them.

Here's How to Configure PowerEdge RAID Controller (PERC) H730
You can't expand multiple VD's across a disk group. You will need to delete the second VD to reconfigure. You might be able to create a new VD with the space, but you can't expand the existing ones.

That said, RAID-5 just isn't great for spinning disk in general. I realize you probably don't have a free slot with this configuration, but maybe you want to consider 2x 1. Better yet, go all-flash instead as mark said, if you can afford to. As to your main question, caching is great in every case, even with SSDs, as the memory in the cache module usually operates even faster than that of an SSD. Definitely keep it turned on and make sure it's battery backed or otherwise power-failure-recoverable, otherwise if the server suddenly shuts off, things will be corrupted.
Most people here will discourage you from RAID5 on platters but especially on 3 drives. Otherwise performance wise 8x ssd in RAID10 would have been the way to go and ditch the separate boot drives. Also, did you look at read intensive vs mixed use on the SSD drives? Dell tends to push you into read intensive configurations. I honestly can't see any noticeable performance difference between the two on real loads unless something saturates the 2GB cache on the PERC then the SSD's have the advantage.
Otherwise some form of read ahead and writeback as long as you have a battery on the PERC are the preferred settings. Once again 3 drive RAID5 on platters is flirting with disaster. Works really good for DC, print server, small intranet hosts and small office or departmental file servers.
The big cache on the newer PERCs really helps on this kind of stuff. The R is a good box. To continue this discussion, please ask a new question.

Once booted into the configuration utility, you will initially be greeted by the Virtual Disk Screen. See image 1. Image 1: Virtual Disk Screen. The management screen shows all of the disk groups and virtual disks created on the raid controller. Most of the configuration can be done from this screen by highlighting the very top line, which will reference the H controller.
Once highlighted, press F2 to open up a drop menu with a number of options. The first of which is going to be creating a Virtual Disk. Image 2: Virtual Disk Management Screen. You will see Virtual Disk size, name, and selection of what available disks will be a part of the array being created. Image 4: Virtual Disk Management Screen. Step 3 : Initialize The Virtual Disk. In order to do this, you will need to scroll down to the newly created Virtual Disk and press F2 once highlighted.
It will pull up a drop menu with Initialization being the first option. Fast Init will only take a few moments, but it will do a full initialization in the background after the fact. Start Init will start the full initialization, which can take hours depending on the size of the Array. Step 4 : Clear The Configuration. The next option within the f2 menu is Clear Config which does exactly what the name suggests.
It will wipe out all raid arrays that have been created on this system.
This should only be used if your intent is to start fresh with the drives and controller. Step 5 : Foreign Configuration. Foreign Config is the next option but will only be selectable in very specific circumstances.
Generally speaking this will only come up when dealing with drive failures or replacing of drives. Step 6 : Security Key Management. Next is Security Key Management which will be used when setting up SED drives Self Encrypting Drives This allows you to set the security key for your SED drives so that if the drives were ever stolen the data on the drive is entirely encrypted and inaccessible without the key.
